Chef Marc Lepine is no stranger to the PEI International Shellfish Festival. He made it to the finals in the Garland Canada International Chef Challenge 2 consecutive years taking home 1st place and $10,000 cash at the 2012 Shellfish Festival and a close 2nd and $2500 cash in 2013.
We recently caught up with Chef Marc to see what he has been up to since the Shellfish Festival. “I’ve been busy working on the expansion of Atelier and the creation of my new restaurant ‘THRU’, so I haven’t had time for competition unfortunately.”
The chefs not only compete at the Festival, they have a full schedule taking part in the Feast and Frolic dinner, industry tours and other Festival events. We asked Marc what his favourite memory from the PEI Shellfish Festival was.” My favorite memory from last year’s competition was having some of my family who live in New Brunswick come to the competition to watch, and they all tried oysters for the first time – if you can believe that!”
We are currently sending out invitations to high profile chefs to compete in the 2014 Garland Canada International Chef Challenge. We wondered what Marc’s advice to these competing chefs would be? “My advice to chefs competing this year – practice cooking specific shellfish recipes that you know are good before heading out. Use big flavours and varying textures.”
