Restaurant: Les Colibris
Elia Herrera is a third generation chef and has followed the examples set by the strong and talented women in her family. She came to Canada from Mexico 15 years ago and has worked and trained as a chef in Spain, France, Belgium and Italy. Elia is now the Executive Chef of the upscale Los Colibris in downtown Toronto. Making the transition from accomplished pastry chef to opening a 150-seat restaurant required serious confidence and skill.
