JP Miron knows that he’s a strong representation of Montreal’s next generation of talented chefs. With an Italian background and a substantial pedigree having worked at some of Montreal and New York’s top restaurants like Au Pied de Cochon and Momofuku, this industry-trained chef is currently the Chef de Cuisine at Bocata Restaurant and is opening a restaurant in July.
JP has a lot of experience with seafood as he was in charge of the raw bar station at two world class restaurants. Currently, cleaning fish, shucking oysters and cracking lobsters is part of his daily work routine.
